Looking for a fun twist on sushi? Try these sushi donuts! Packed with all the fresh, savoury flavours you love -smoked salmon, avocado, and a kick of chilli mayo- this recipe is perfect for impressing guests or enjoying a fun solo treat. Trust me, once you try these, you’ll be hooked!
Makes: 6-8 donuts depending on mould size
Ready in: 120mins (including minimum set time)
INGREDIENTS:
1 cup uncooked medium grain rice
2 tbsp rice vinegar
1 package smoked salmon (for topping)
1/3 cup kewpie mayo
1/2 lime, juiced
2 tsp chilli oil
1 cucumber, thinly sliced (for topping)
1 avocado, thinly sliced (for topping)
1-2 sheets seaweed, sliced (for topping)
2 radishes, thinly sliced (for topping)
Sesame seeds (for garnish)
Method
Step 1. Cook the rice: Follow package directions to cook the sushi rice. Once cooked, immediately stir in the rice vinegar and set aside to cool.
Step 2. Make the sauce: In a bowl, mix kewpie mayo, lime juice, and chilli oil until smooth.
Step 3. Assemble the donuts: Layer your toppings (salmon, avocado, cucumber, seaweed, radish) at the bottom of silicone donut tin in a fun design.
Step 4. Shape the rice: Press the cooled rice into the tin, packing it tightly. Refrigerate for at least 1.5 hours, or overnight for the best results!
Step 5. Finish and garnish: Once set, carefully remove the rice donuts from the tin. Top with sesame seeds and drizzle with the chilli mayo sauce.
