This super speedy sesame chicken recipe is going to quickly become your favourite go-to easy prep or dinner options - It's so much better than takeout.

Ingredients
2 tbsp extra virgin olive oil
500g boneless skinless chicken thighs, cut into strips
2 broccolini bunches cut into thirds
2 medium carrots cut into half moons
3 green shallots thinly sliced
1 tbsp grated ginger
2 cloves garlic minced (I used 2 tbsp infused garlic oil instead)
2 tbsp soy sauce
2 tbsp rice vinegar
1 tsp toasted sesame oil
1 tbsp sesame black or white sesame seeds
2 tbsp oyster sauce
1 tbsp cornstarch
Method
Step 1. In a small boil, whisk together soy sauce, rice vinegar, toasted sesame oil, oyster sauce, cornstarch and set aside
Step 2. Add a splash of olive oil to a large pan over high heat, then add the chicken and cook for between 8-10 mins or until golden brown
Step 3. Add broccoli, carrots, shallots, ginger, and garlic and cook for another 3 minutes stirring frequently
Step 4. Pour sesame oil mixture over the top and stir. Add water and stir until mixture has thickened, about one minute. Sprinkle sesame seeds on top and serve with a side of rice

How much water do you add?
Hi, really keen to start food prepping as a busy full time working mum and teacher! Can I ask if all 4 servings could be stored in the fridge to take to work each day? Or should I freeze them?
