Scrumptious Pizza Scrolls!

Say goodbye to baking powders, yeast, rising time, and hello to a quick and easy pizza and scroll bases! These make the best kind of snack and you’re going to really enjoy making them because it is soo simple. I’ve shared the exact combo I posted on my Instagram stories, but if you keep ‘scrolling’ down I’ve come up with a few extra filling ideas for you to try… Let me know how you like them and what you end up filling yours with!



Makes: 9-10 Scrolls

Ready In: 30 mins.


Ingredients:

Dough

  • 1 ½ cups self-raising flour (I used wholemeal)

  • 1 cup plain yoghurt (I used plain@yoproau)

Filling

  • 2 tbsp tomato paste

  • ½ capsicums, diced

  • 4 small slices of ham, diced

  • 4 button mushrooms, sliced

  • ½ tomato diced

  • ¾ cup light tasty cheese, shredded

  • Salt and pepper to taste



Method


Step 1. Preheat oven to 180C and line baking tray. In a large bowl, combine the flour and yoghurt until it forms a dough. If the dough is too dry add 2 tbsp yoghurt and if it’s too sticky add 1 tbsp extra flour


Step 2. Knead the dough on a lightly floured chopping board until it feels soft and pliable


Step 3. Using a rolling pin (or Cobram olive oil bottle lol) to roll the dough into either a square or rectangle (roughly 20-30 cm x 20cm)


Step 4. Spread the tomato paste over the dough, add the tomato, capsicum, mushroom, ham, ½ cup cheese, and season with salt and pepper to taste


Step 5. Horizontally roll up the dough as tightly as possible, so that you end up with a long cylinder shape


Step 6. Slice into 10 pieces and arrange on the baking tray, cut side facing upwards and sprinkle the top with the remaining ¼ cup shredded cheese


Step 7. Bake for 15-20mins or until golden brown and enjoy



Filling combinations to try:

  • Olive oil, zaatar, halloumi

  • Olive oil, zaatar, tomatoes, fresh mint, halloumi

  • Nuttlex, cinnamon, brown sugar

  • Tomato paste, ham, cheese and pineapple

  • Peanut butter, honey, banana slices, dark choc chips


Notes: Store leftovers in an airtight container in the fridge
