Rocket Beetroot and Feta Salad

Easy, speedy, and bursting with flavour, this salad will make the perfect addition to your next BBQ or Christmas lunch sides selection!

Serves: 4-6

Ingredients

• 400g rocket leaves, rinsed and drained

• 20g walnuts, lightly crushed

• 20g Danish feta cheese, crumbled

• 1 400g, rinsed and drained tin of beetroot

Dressing

• Extra virgin olive oil

• Pinch of sugar

• Salt, pepper,

Method

Step 1. Toss all the ingredients in a bowl, drizzle with olive oil, a pinch of sugar and season with salt and pepper to taste.
