Ingredients
400g rocket leaves, rinsed and drained
20g walnuts, lightly crushed
20g Danish feta cheese, crumbled
1 400g, rinsed and drained tin of beetroot
Dressing
Extra virgin olive oil
Pinch of sugar
Salt, pepper,
Method
Step 1. Toss all the ingredients in a bowl, drizzle with olive oil, a pinch of sugar and season with salt and pepper to taste.
