Easy enough for a weeknight yet impressive enough for entertaining, this speedy salmon and greens dinner will quickly become your new favourite. Make a double batch of the glaze and use it on everything from chicken to tofu, it’s so super yum!
Serves: 4
Ready In: 30mins
Ingredients:
6 tbsp miso paste
6 tbsp honey
6 tbsp soy sauce
6 tbsp freshly squeezed lemon juice
2-3 tbsp freshly grated ginger
4 salmon fillets
150g beans of choice, roughly chopped
4 bunches baby bok choy, roughly chopped
½ cup shallots, sliced (garnish)
2 tbsp sesame seeds (garnish)
Method
Step 1. Preheat the oven to 200°C and line a baking tray. Combine the miso paste, honey, soy sauce, lemon juice, and ginger in a large bowl
Step 2. Dunk the salmon in the miso glaze and arrange along one edge of the baking sheet
Step 3. Next, dunk the beans in the glaze and arrange in an even layer on the baking tray
Step 4. Add bok choy with the remaining glaze to the tray and arrange in a pile in any leftover space. Season the salmon with salt
Step 5. Roast in the oven for 12 to 15 minutes, or until the salmon is firm to the touch
Step 6. Remove from the oven and garnish with sliced shallots and sesame seeds
Storage:
Keep in the fridge up to 3-4 days and reheat in the microwave in just 2 minutes.
