Bold, Flavourful, and Effortlessly Delicious
This dish is a perfect balance of bold spices, tangy lemon, and tender chicken, all cooked together in one pan for minimal cleanup. It’s easy, full of flavour, and guaranteed to impress anyone at your table, but especially little people if you have any. Let me know if you give it a go!

Ingredients
Seasoning:
2 tsp paprika
1 tsp cumin
1 tsp ground ginger
1/2 tsp cinnamon
1/2 tsp turmeric
1/4 tsp cayenne
1 tsp salt
Main Dish:
500g chicken thighs
Olive oil
1 onion, chopped
4 garlic cloves, minced
1 tbsp tomato paste
1 cup chicken broth
1 400g can diced tomatoes
1 cinnamon stick
1 lemon, chopped
1/2 cup green olives, pitted
1/4 cup coriander, chopped
1/4 cup parsley, chopped
Method
Step 1. Season the chicken: Mix the paprika, cumin, ginger, cinnamon, turmeric, cayenne, and salt. Rub this spice blend onto the chicken thighs.
Step 2. Sear the chicken: Heat olive oil in a large pan over medium-high heat. Brown the chicken thighs for 5 mins per side.
Step 3. Saute: In the same pan, cook the onion for 5 minutes until soft, then add garlic and tomato paste and cook for 1 more min.
Step 4. Simmer: Add chicken broth, scraping up any brown bits. Stir in the diced tomatoes, cinnamon stick, and browned chicken. Bring to a boil, reduce heat to low, cover, and simmer for 25 minutes.
Step 5. Finish: top with chopped lemon, olives, coriander, and parsley. Simmer uncovered for another 10 minutes until the chicken is fully tender.
Step 6. Serve: Discard the cinnamon stick, adjust seasoning if needed, and serve with extra coriander and parsley. Pair with rice, a simple salad, or mashed potatoes and enjoy x
