One-Pan Beef Ramen

One-Pan Beef Ramen: Satisfy your taste buds with this one-pan beef ramen, loaded with fresh veggies, and noodles in a sticky-sweet soy sauce. It’s a speedy, no-fuss meal the whole family will love, and cleanup is a breeze xx

Serves: 4-5
Ready In: 30mins
Ingredients
Olive oil
500g beef stir-fry strips
250g ramen noodles, cooked and drained
1 capsicum, thinly sliced
1 onion, thinly sliced
2 carrots, shredded
1 bunch baby bok choy, roughly chopped
100g mushrooms, sliced
Optional: sesame seeds and green shallots for garnish
Sauce:
½ cup low-sodium soy sauce
5 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp brown sugar
1 tbsp fish sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp cornstarch
Method
Step 1. Whisk all sauce ingredients together and set aside.
Step 2. Heat drizzle of olive oil in a large pan or wok over medium-high heat. Add beef and cook 2-3 mins per side until browned and cooked through. Remove beef, drain excess liquid, and wipe pan clean if needed
Step 3. Add another drizzle of olive oil to the pan, then saute onion for 2-3 mins until softened. Add capsicum, mushrooms, and the white parts of the bok choy, cooking for another 3-4 mins
Step 4. Stir in carrots and green parts of bok choy, cooking for 2 mins until veggies are tender but still crisp
Step 5. Add the cooked beef and noodles, pour in the sauce, and stir to coat. Cook for 1-2 mins until the sauce thickens and everything is well combined
Step 6. Remove from heat, garnish with sesame seeds and green onions, and serve
