This is one of Harper’s fave snacks! A super quick and easy raspberry puff pastry swirls, dusted in sugar. Assemble in minutes and taste the deliciousness xx
Ready in: 30 mins
Makes: 20-30 mini swirls
Ingredients
3 sheets of puff pastry
1 punnet of raspberries
1/4 lemon, juiced
1 tbsp sugar
olive oil
Icing sugar (optional)
Method
Step 1. Preheat oven to 180C and line a baking tray. In a small bowl add the raspberries, sugar, lemon and mash until combined in a jam-like consistency
Step 2. Add 1-2 tbsp of the jam-like mixture to a sheet of slightly defrosted puff pastry and spread evenly
Step 3. Tightly roll the puff pastry ensuring not to lose too much of the jam mixture and cut into bit sized pieces. Place each small swirl on the prepared tray, lightly brush tops with olive oil and bake for 15-20 mins or until golden brown
Step 4. Dust with icing sugar and enjoy warm!
