Nothing better than chicken, cream, sun dried tomatoes and parmesan win a one pan dish to have the entire family asking for more! Let me know if you give this one a go!

Serves: 4-5
Ingredients
500g chicken breast, diced
Olive oil
4-5 gloves garlic crushed
⅓ up Sun-dried tomatoes in oill, diced
2 tsp Italian seasoning
2 tsp paprika
1/2 tsp salt
1 tsp ground black pepper
1 cup risoni
2 3/4 cups chicken stock (reduced salt)
3/4 cup cooking cream
2 large handfuls fresh baby spinach
3/4 cup parmesan cheese, shaved
Method
Step 1. Add a drizzle of olive oil to a large, deep pan over medium heat, add chicken. Stir and cook for 2-3 mins until the edges start to cook.
Step 2. Add in the sun dried tomatoes, garlic, italian seasoning, paprika, salt & black pepper and cook for 3-4 mins..
Step 3. Add the risoni and stock and stir well. Reduce heat to medium. Cover the pan and cook for 12 mins, removing the cover every few minutes to stir.
Step 4. Once the risoni is cooked through, add the cream and baby spinach and stir until the spinach is wilted.
Step 5. Top with parmesan cheese, remove from heat, plate and enjoy!
