Lemon Pepper Prawns and Risoni comes together in one pan for an easy weeknight dinner. Light, yet flavourful, and sure to become a fam fave!

Serves: 4
Ingredients
2 Tbsp. extra-virgin olive oil, divided
1 lb. raw peeled and deveined shrimp
1 tsp. freshly ground black pepper
1/2 onion, finely chopped
4 garlic cloves, minced
1 1/4 cups dry risoni pasta
3 cups reduced salt chicken or vegetable stock
1 cup fresh baby spinach
200g fresh green beans, trimmed
Zest and juice of 1 lemon
2 tbsp finely chopped fresh parsley (garnish optional)
Method
Step 1. Add a drizzle of and olive oil in a large pan over medium heat, add prawns and cook 5-6 mins or until dark orange and cooked through
Step 2. Add onion and garlic; cook 2 - 3 mins, stirring occasionally, until fragment. Add risoni, stir to coat; cook 1 to 2 mins. Add stock, sprinkle of salt and 3/4 tsp cracked black pepper; bring mixture to a boil. Reduce heat, cover, and gently simmer for 10 to 15 minutes, until risoni is al dente and most liquid is absorbed.
Step 3. During the final few minutes, stir in spinach and beans/. Cover and continue cooking until spinach is wilted (or beans are tender with still some bite). Uncover and stir in lemon zest and juice.
Step 4. Garnish with fresh parsley and extra cracked black pepper, if desired. Enjoy while still warm
