Have you got a heap of leftover hot cross buns? If you do, please try this delicious hot cross bun pudding to use them all up! It’s literally the best way to ensure they don’t go to waste Ready In: 70mins Serves: 9
Ingredients
9 hot cross buns
3 tbsp spreadable butter
3 tsp cinnamon sugar
600ml vanilla yoghurt
1.5 cups milk
½ cup maple syrup
2 tsp vanilla essence
8 eggs
Icing sugar to dust
Berries to garnish
Method
Step 1. Preheat oven to 160C and line or lightly grease a baking dish
Step 2. In a large mixing bowl, lightly whisk the yoghurt, milk, eggs, maple syrup and vanilla together until combined
Step 3. In a small bowl combine the cinnamon sugar and butter, then cut the hot cross buns into slices horizontally, making a bottom, middle and top.
Step 4. Spread butter mixture over the base and middle slices of hot cross buns. Leave tops unbuttered
Step 5. Arrange buttered bases over the base of the dish. Pour over a third of the egg mixture. Stand for a few minutes. Repeat the process, standing between layers, finishing with the tops of the hot cross buns and the remaining mixture
Step 6. Bake for 50mins or until browned lightly. Allow sitting for 10 mins. Serve dusted with icing and fresh berries
Notes: you can use cooking cream or plain yoghurt, but IMO vanilla tastes best
