It’s time to ditch ready made granola and whip up your own. It’s quick and easy to make, naturally sweetened and so flavourful and delicious!
Serves: 4-5
Ready in: 50 minutes
Ingredients:
2 cups rolled oats
1/2 cup pecans, crushed
1/4 cup pumpkin seeds
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 cup coconut oil, melted
1/4 cup rice malt syrup
1 tsp vanilla extract
1/2 cup dried cranberries
1/4 cup coconut flakes
Method:
Step 1.Preheat oven to 150°C and cover a large baking tray with baking paper
Step 2. In medium bowl mix all ingredients until blended
Step 3. Place mixture on baking tray and spread it out evenly
Step 4. Bake for 45 minutes or until golden brown. Be sure to mix mixture a few times for even baking
I'll be enjoying 1/4 cup of this granola with fresh berries as a topping to my yogurt
Notes: to make it nut free use seeds like sunflower seeds. Swap out pecans for nuts of choice. As always, rice-malt syrup can be exchanged for maple syrup or honey. Dried cranberries can also be swapped out for any dried fruit of choice
