Healthy Peanut Butter Breakfast Blondies

Because sometimes a girl wants peanut butter AND chocolate. Enter, Healthy Peanut Butter Breakfast Blondies. Made with coconut flour and maple syrup, they are gluten free and low in sugar.


Ready In: 30 minutes

Serves: Makes12

Ingredients:

  • 2/3 cup smooth natural peanut butter

  • 2 eggs, lightly beaten

  • 1/2 cup pure maple syrup

  • 1 tsp vanilla extract

  • 1/3 cup + 1 tbsp coconut flour

  • 1/4 tsp baking soda

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 1/3 cup dark chocolate chips


Method:


Step 1. Preheat oven to 180 and line a 20 x 20cm tray with baking paper or lightly spray with cooking spray


Step 2. In a large bowl, mix peanut butter, eggs, maple syrup and vanilla.


Step 3. In a small bowl combine coconut flour, baking soda, baking powder and salt.


Step 4. Pour dry ingredients into wet and mix until well combined. Add chocolate chips


Step 5. Pour into pan and bake for18-20 minutes or until the edges start to turn a golden brown. Let rest for 10 minutes and enjoy!

Just made these, probably won't be having it for breakfast but will definitely being enjoying a piece with a cup of tea in the afternoon. So easy, but so delicious.
