All the elements of this wrap will stay fresh in the fridge for 3-4 days so you can quickly and easily build a sandwich on demand.
Ingredients:
Chicken
400g chicken breast
1/3 cup plain YoPRO
2 cloves garlic, crushed (I used 1clove, but it would taste better with 2)
1 tbsp dried oregano
3 lemons, juiced
1 lemon, zest
Salt and pepper to taste
Filling
Wholegrain wraps
3 tomatoes, diced
2 cucumbers, diced
50g feta cheese, crumbled
Salt and pepper to taste
Tzatziki sauce
1 cup plain yoghurt
1 small cucumber, diced
1 garlic clove, crushed
1 tbsp lemon juice
1 tbsp olive oil
Salt to taste
Method
Step 1. Place marinade ingredients in a bowl and mix. Add the chicken and massage to cover in the marinade. Place in the fridge for at least 30min, ideally 2-3hrs
Step 2. Place all Tzatziki sauce ingredients in a small bowl and mix to combine.
Set aside for at least 10 minutes for the flavours to develop
Step 3. Heat a drizzle of olive oil in a pan over medium heat. Using tongs to add chicken breast and cook until golden, turning often. Remove from the heat and allow to rest for 5min before slicing. While the chicken is cooking, prepare filling ingredients as instructed in the ingredients list
Step 3. Serve the chicken with the tzatziki and fillings in a warm wrap
