This one is lactose free and oh so flavourful! The perfect kind of don’t have time, but still want a filling and impressive meal xx
Ready in: 15-20 mins
Serves: 4
Ingredients
250g uncooked spaghetti
2 large eggs
4 slices of bacon, diced
4 cloves garlic crushed
½ cup parmesan cheese, finely grated
Salt and pepper to taste
Parsley, finely chopped (optional garnish roughly, 2 tbsp)
METHOD
Step 1. Cook pasta according to package instructions; reserve 1/2 cup water and drain well
Step 2. Whisk together eggs and Parmesan; set aside
Step 3. Add bacon to a large pan on medium high heat and cook until brown and crispy, roughly 6-8 mins. Stir in garlic until fragrant, about 1 min. Reduce heat to low
Step 4. Working quickly, stir in pasta and egg mixture, and gently toss to combine; season with salt and pepper, to taste. Add reserved pasta water, one tbsp at a time, until desired consistency is reached
Step 5. Serve immediately, garnished with parsley, if desired.
