Frugal 5 Recipe - Dinosaur pasta AKA green Mac and Cheese

Tasty and a source of iron and veg for little ones. This is one of Eli’s favourites atm xx



Ready in: 15-20 mins

Serves: 4 -6


Ingredients

  • 250g macaroni pasta, uncooked

  • 3 cups broccoli florets

  • 1¼ cups milk

  • 2 tbsp butter

  • 1 tbsp flour

  • 1½ cup shredded extra sharp cheddar cheese

  • 1 tsp garlic powder

  • 1 tsp dijon mustard

  • Salt and pepper to taste


Method

Step 1. Cook pasta according to package instructions; reserve 1/2 cup water and drain well


Step 2. Steam broccoli florets and then blend until smooth


Step 3. Heat a large pot over low to medium heat, add milk butter, flour, cheese, garlic powder mustard and a dash of salt and pepper, and whisk until slightly thickened, smooth and the cheese has melted. Add broccoli pure and mix through until well combined


Step 4. Turn off heat, and add cooked pasta and stir to combine. Taste to add more salt, if needed. Add reserved water 1 tbsp at a time until desired thickness and texture is achieved
