This is one of my fam’s fave recipes! It comes together in mins with only a few ingredients and heaps of rich, delicious flavours! An easy, healthy, inexpensive, and gluten-free recipe for you to try x

Serves: 4
Ingredients
salt and pepper
2-3 chicken breasts
2 tbsp of pesto for each chicken breast used
2 tomatoes sliced cheese
¼ cup tasty or mozzarella cheese per chicken breast
Rice to serve
Method
Step 1. Preheat oven to 200C. Flatten chicken breast with a mallet until the thickest part has evened out, season with salt and pepper, and add to a lined baking tray
Step 2. Spread 2 tbsp of pesto on top of each chicken breast
Step 3. Add 1-2 slices of tomatoes to each chicken breast
Step 4. Sprinkle cheese on top of each chicken breast
Step 5. Bake in the oven for 35-40mins or until the chicken is done and the juices run clear.
Step 6. Serve over a bed of rice and enjoy!
