Eggplant Pizza Bites

Ready in less than 20mins these Eggplant Pizza Bites are delicious, wholesome, and super versatile, top them with your fave ingredients and enjoy.

Ingredients

• 1 large eggplant, cut into 1cm slices

• 1/4 cup tasty or parmesan, shredded

• 2 slices ham, diced (remove for a vegetarian option)

• 2 tbsp goats cheese, crumbled

• 1/4 cup tomato paste

• 1 tsp oregano

• 1 small clove garlic, crushed (optional)

• Salt

Method

Step 1. Place eggplant slices into air fryer and bake at 200C for 11mins

Step 2. Combine the tomato paste, oregano and garlic, and pinch of salt in a small bowl

Step 3. Once the eggplant is cooked top with the tomato paste mixture, diced ham, cheese and place back into the air fryer to cook at 200C for another 3-4 mins and enjoy hot!
