Easy 2 Ingredient Biscoff Muffins

This caramelised cookie flavour spread is second-to-none and tastes just as delicious in the form of these 2 ingredient muffins. Yes, you read correctly. All you’ll need to purchase is the Biscoff spread and eggs! You literally can’t go wrong with it!


Makes: 12 Muffins

Ready in: 40mins


Ingredients

  • 2 x 400g jars of smooth Biscoff spread

  • 4 large eggs, room temp. 

  • 4 tsp of baking powder 

Toppings (optional)

  • Biscoff spread, melted

  • Biscoff biscuits, crushed or whole



Method

Step 1. Preheat oven to 180C and lightly grease muffin tin. Remove all foil from Biscoff  jars and melt in microwave for 40 secs. 


Step 2. Lightly beat eggs and then combine all ingredients in a medium sized bowl mixing until well combined. Batter should look like a thick caramel and not a traditional muffin mix. 


Step 3. Evenly distribute batter in muffin tin and bake for 30 mins. 


Step 4. Remove from the oven, allowing to cool  before topping with additional biscoff spread and cookies if you wish and enjoy!
