Coconut & white Chocolate Cookies

Coming right up!
A one-bowl recipe with only 6 ingredients for a quick and tasty cookie snack! They taste like a coconut macaroon, soft in the centre, with a little crunch on the outside.

Ready In: 25 mins
Makes: 12 cookies
Ingredients:
2 cups desiccated coconut
1 1/2 cup almond meal
2 eggs
1/2 cup coconut oil, melted
1/2 cup rice malt syrup
1 tsp vanilla essence (optional)
1/3 cup baking white chocolate, melted
Method
Step 1. Preheat oven to 180C and line baking tray
Step 2. In a medium-sized bowl add all the cookie ingredients and mix well
Step 3. Divide the cookie dough into 12 balls pressing them down on your lined baking tray to flatten the cookies
Step 4. Bake for 10 -12 mins or until the sides are golden brown
Step 5. Allow to cool before drizzling with melted white chocolate and enjoying
Storage: Store in an airtight container for up to 5 days!
Note: If the white chocolate is too sticky to drizzle add 1-2 tsp of melted coconut oil to help.
