Serves: 4
Ingredients
1 punnet of cherry tomatos
1 avocado
1 x 150g bag of baby spinach leaves
1 large handful of green peas
2 large or three small carrots
150g plain goats cheese
1 large lemon
paprika
extra virgin olive oil
500g chicken breast
Method
Step 1. Cook Chicken - heat a drizzle of olive oil in a pan over medium heat. Add chicken breast and cook until lightly golden. Then transfer to a tray lined with foil or baking paper and bake in the oven for 8 -11minutes or until completely cooked through. Season with salt and pepper to taste. Once the chicken is cooked, let cool and roughly shred using fingers or two forks
Step 2. Prep Veggies - chop unpeeled carrots into bite sized pieces. Use a sharp knife to trim ends off the green peas and remove the thin string from one side. De-seed and skin avocado. Cut the Avocado into 4 quarters for meal prepping. Also cut the lemon into 4 quarters for meal prepping
Step 3. Combine baby spinach, tomatoes, carrots, snow peas and shredded chicken. Crumble goats cheese over the top
Step 4. Dress with a splash of extra Virgin Olive Oil, sprinkle of paprika, lemon and salt to taste and enjoy xo
Note: If prepping, do not add dressing until you are ready to eat
