Do you want to live out your nostalgic, teenage dream and be the most popular girl in ‘school’? Then whip up a batch of these chewy banana granola cookies for the office and watch all your colleagues flock to you. That is of course assuming that the cookies actually make it into the office ;)
Makes: 12- 16 cookies
Ready in: 20 mins
Ingredients
2 cups Balance Bare granola
½ cup gluten-free plain flour (I use buckwheat flour)
½ tsp bicarb soda
Pinch salt
½ large banana (or 1 whole small banana)
⅓ cup coconut sugar (or brown sugar)
3 tbsp coconut oil, melted
3 tbsp smooth natural peanut butter (or tahini)
1 tsp vanilla extract
Method
Step 1. Preheat your oven to 180C and line a large baking tray with baking paper. 2. Mash banana into a puree and then stir in coconut sugar, vanilla, coconut oil and peanut butter
Step 2. Add in granola and flour, and stir to form a thick sticky dough. (If the Dough is too running place in the fridge for 30mins to firm up)
Step 3. Scoop out heaped tablespoons of the dough, roll roughly into balls and then flatten into thin cookies on the baking tray. (Tip: you can wet your hands very slightly to stop the dough from sticking as much)
Step 4. Bake for approximately 8 to 10 minutes or until the edges are dark golden brown. Remove from the oven and allow to cool to room temperature. The cookies will be hard at the edges and chewy in the centre
Step 5. Dizzle with dark or white chocolate (optional)
