Welcoming Bountylicious to our clean treat fam! Reminiscent of a delicious bounty bar – only made with better ingredients. I really enjoyed creating this treat, It was super simple (I used the same top and tale as Twixola) with only a few ingredients and it’s not overwhelmingly sweet. Let me know how you go when you try it. It may not be my prettiest slice, but I promise it tastes the goods!

Makes: 24- 28 pieces

Ingredients:
Base:
1 cup coconut flour.
1/2 cup maple syrup
1/2 cup coconut oil, melted
1 tsp vanilla extract
Middle:
2 1/2 cups desiccated coconut
1/2 cup coconut oil, melted
1/2 cup canned coconut milk
3 tbsp maple syrup
1 tbsp vanilla extract
pinch of salt
Top
100g dark chocolate, melted
1 tbsp coconut oil
Method:
Step 1. Place all the base ingredients in bowl and mix until well combined. Allow the dough to rest for a couple of minutes before firmly pressing into the bottom of a lined tin
Step 2. In another bowl add all the wet ingredients for the middle layer and whisk until combine. Add the desiccated coconut and mix well. Pour over the base, smooth with the back of a spoon and place back into the freezer while you complete the next step
Step 3. Melt chocolate and coconut oil in the microwave and pour over your slice. Place your Bountylicious in the freezer to set. Enjoy fam x
Notes: Make sure that you allow it to freeze properly before you slice it, so that the coconut layer is completely frozen, otherwise it may fall apart. Tray size I used is 24 x14 cm
