Blueberry Crumble Slice

A bright and delicious Blueberry Crumble Slice that is super easy to make. A sweet and juicy blueberry filling sandwiched between buttery crumble, I recommend serving it with a side of vanilla ice cream - IT SOO YUMM!



Serves: 9

Ready In: 60mins


Ingredients:

  • 2 cups blueberries (I used frozen)

  • 1/4 cup raw sugar(for filling)

  • 2 tsp cornflour

  • 2 cups plain flour

  • 1/2 tsp baking powder

  • Pinch of salt

  • 3/4 cups cold unsalted butter

  • 1/3 cup raw sugar (for pastry)

  • 1 egg

  • 1 tsp vanilla essence


Method

Step 1. Pre-heat oven to 180C and line a 20 x 20cm baking tin. In a bowl, combine blueberries, sugar and corn flour. Mix well and set aside.


Step 2. In a large bowl, combine flour, baking powder and salt. Slice the cold unsalted butter into smaller chunks. Add to the flour mixture and pulse with your food processor until crumbs are formed.


Step 3. In a separate bowl combine the sugar, egg and vanilla extract then add ingredients into crumble mixture. Mix using food processor– mixture should be slightly crumbly.


Step 4. Bring 3/4 of crumbly mixture to the bottom of your baking tin paper. Press mixture to form a layer of buttery crumb pastry. Add blueberry mixture onto the layer of crumb pastry, and spread it out evenly. Sprinkle the top of the blueberry mixture with the rest of the crumbles.


Step 5. Bake in the oven for 35-40 mins.Remove from oven and let it cool for 5-10 mins. Then lift baking paper and bring pastry out from the pan. Let it cool for another 20 mins.


Step 6. Cut into 9 square bars. Serve with a side of vanilla icecream and enjoy!



Notes

  • Butter must be cold or frozen to create the crumble

  • Fresh berries will work just as well and frozen

  • If you don’t like blueberries any other berry of choice would work. I’m probably going to make it again with MANGO - fresh or frozen would work!
