These no-bake blueberry cheesecake bites are delish and easy-to-make. The cheesecake is lusciously creamy with the perfect amount of chocolate on top!

Makes: 9-24
Ingredients
250g block cream cheese
1 cup fine desiccated coconut
2 tbsp rice malt syrup
½ cup frozen blueberries
200g dark chocolate melted
Method
Step 1. Place the cream cheese, rice malt syrup, blueberries and coconut into a processor and blend until smooth.
Step 2. Lightly oil a muffin tin and evenly distribute the mixture, pressing down with the back of a spoon to create a smooth and even surface
Step 3. Melt the dark chocolate and pour over the top of each cheesecake. Place in the freezer to set for approximately 60mins.
Serve with a side of fresh fruit and enjoy!
